I feel on this quite alot, I live the bubble life, up and down days, very limited. Man seems like you just keep hitting ALL HELL. Perhaps you should tell life to to screw off and not eat anything but prepackaged bottled gluten-free certified bone broth and sleep for 1-2 days. I found a anti stress supplement (Liquid Health Stress & Energy) that I take in partial doses through out the day along with magnesium supplements (Calm Vitality, and Doctors Best), seems to help. I also walk a lot, I find pacing or calling a friend and talking out my issues to help. The whole gluten thing drove me nuts and the brain damaged that resulted... -

............OK.......I got to say sorry but I think you need to move somewhere that actually has good doctors and a healthcare system that can help you. Sounds like everyone in your area is a quack or does not care. That is ridiculous to have to deal with that. -

Hate to say it but this keeps popping up in my mind, your homemade sausage might be doing it. If you have used a contaminated spice or ingredient in the grinder, packer, it could be contaminating later batches. I know the old modified meat grinder I use for a seed mill is metal and porous. Would be near impossible to clean out good if it got contaminated... -

It honestly got a tad stupid how I would fix stuff, bit from paranoia but I used to just open the pantry, spice door, and fridge and get everything ready then put on gloves and fix my meal without touching any handles so I knew my food would be safe. I would say go with what GFinDC suggested and go on a whole food only diet, nothing processed for a while, A food elimination diet might also help, you might have developed a intolerance to some other foods so try removing certain foods completely from your diet for a week then reintroducing them to see if feel different. Gluten is present in wheat, rye, barley, etc. A different kind of gluten protein is present in some other foods but not the kind to worry about (IE corn gluten is a different kind of gluten) If you wish to cut out dairy you do not have to give up yogurts there is So Delicious Coconut yogurt available and even in unsweetened versions ends up being healthier... -

I have broken down and gotten a ice cream machine in the past 4 months and a bunch of lor ann oils ice cream flavorings. Yeah, my first response to gluten is my lymp nodes swell, and I have been having the night sweats for a few years now. Got to admit the doctors actually causally said I might have lymphoma but needed further testing. Sorry can not be of more help, I will respond here if they ever get back to me about it.

Yep, exactly like me. I did a post on the mental trauma of this earlier. There are plenty of post related to this with others talking about it. I do a mixed regime supplements to help with the anxiety, and has really taken the edge off. As for the fear, yeah my reactions are so bad that is instilled in me as a trauma and I have very similar dramatic reactions...

Bit of a thought, try dropping both, getting the individual ingredients by themselves and try using just a teaspoon of one. Might be nasty and bland but would help figure out what it is that is bothering you.
