  2. A plain Plantain from the store will be a naturally gluten free fruit related to the banana. I experimented with making emapanada dough out of them a few years ago and got no celiac reaction. The only concern would be if someone else has prepared them, battered them, or used them with gluten containing ingredients.

I still do lasagna like my family taught me but with direct substitutions, for me I either use peeler or a mandolin to slice zucchini into lone wide strips or I might splurge or palmini lasagna noodles. My corn allergy never flared to the capsules so I assume they lack the proteins that trigger my issues (blood blisters in mouth, swelling tongue throat to corn).
