I've found a key factor in ' Curing Celiac Disease '
Ennis-TX replied to Zprime's topic in Coping with Celiac Disease
...looks like you have it positive IgA and biopsy damage I will admit one thing,,you over came the pain and discomfort through will power while your immune system is still destroying it. To be honest I was numb to my pain for years til it got to a certain point and then became hyper aware after being gluten free for awhile. Try the gluten challenge... -

I only have one place...

Lets Talk About Villi
Ennis-TX replied to Zprime's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I know I got glutened for sure last year...it took over 4 months to get back to normal BMs and I still have to blend some food to make digestion easier while avoiding spices and limiting nightshades. Think of one gluten exposure of a few crumbs triggering the body to attack for weeks and it slowly stops attacking before you can then start healing. Often... -

Some where probably wondering what I do for my personal batches since I can not really eat onions or garlic much. I up the broccoli to 16oz, steam and food process, let cool, add in 2 eggs and a extra 1-2 tbsp flax meal and up the black pepper sometimes add in nutritional yeast or kale powder but otherwise the same.

Many say to buy them in a different color or put tape on the handle. You can buy casserole pans and enameled pots in a unique color also...baking sheets I guess you could engrave the lip? Parchment paper, foil lining and crackpot liners might be a extra precaution.....or set up a camp kitchen in another room so you have a dedicated place. IE induction cook...

Endoscopy Tomorrow, And Terrified!
Ennis-TX replied to foodiegurl's topic in Coping with Celiac Disease
The scariest part for me was the prep (large amounts of laxatives and fasting to clean our your intestines), got in fasted and cleaned out, hooked up the IV, wheeled me in they injected the stuff in the IV and you just go out, no pain, just deep sleep like state. Come to in the recovery room, and have someone drive you home. For my first time they removed... -
So concept was make tater tots with another veggie, went with a broccoli recipe and modified it, It taste like broccoli casserole and tater tots had a kid. Been in my rotation for the last few months but I do my personal batches with just a faction of the onion and garlic. 10oz of broccoli florets steamed 1/2 Onion minced in a food processor 1/2...

Cycling lady has some good points, I had some other issues and had some foods that just caused odd issues over the years due to food intolerance or sensitivities, even leaky gut causing odd reactions that went away after healing. Examples for me Xantham gum mimicked gluten with vomiting and pain Yeast, used for bread again makes me vomit and pain Soy...

>.< I have to make mine a bit separate, I can not use heavy spices or night shades like peppers or tomatoes too much only a tiny amount. The garlic and onions are small amounts now days or I get gas.bloat and I can not eat it for 2 days in a row for some odd reason. Taking Supplements/Vitamins
Ennis-TX replied to kanucme2019's topic in Gluten-Free Foods, Products, Shopping & Medications
It varies from person to person and what you diet is, Many Celiacs find they need to supplement B-vitamins, Magnesium, vitamin D, sometimes iron, vitamins C, etc. I use Liquid Health Mega B complex and Neurological support for B-vitamins taking 1 tbsp each twice a day with meal. They also make a multivitamin I think just pour the RD in a glass and drink... -
is this celiac??
Ennis-TX replied to TrailWalker's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
...OK exactly what GFinDC said For the antibodies to show in the blood they say 12 weeks but I have seen some work with min of 8 weeks gluten diet, for damage to show on the scope they run down your throat (endoscope) 2 weeks of gluten, at least 1-2 slices of bread of day they say. But do note many of us can have symptoms after a gluten exposure that last... -
Unsure on studies but the bodies inability to get nutrients in the necessary quantities for repair and daily function results in very similar issues. If the body has immune reactions to foods like celiac or allergies and/or food sensitives or intolerance issues you can also see this as it is constantly working overdrive in the background. There are many...

Gluten free Teacher Contamination
Ennis-TX replied to celiac-teacher's topic in Coping with Celiac Disease
You keep advocating for yourself, if it gets really obvious make documentation for later. Celiac does fall under the Americans with Disability Act so they can not fire you for it and have to work with you. Few tips, try covering the tables with butcher paper and taping it down so you can toss and go. Webstraunt has it in huge 30" and 36" wide 700' commercial... -
Well if she feels up for it later, I have list safe gluten free alternatives and vegan options. News: Is Coffee Gluten-Free? It's Complicated
Ennis-TX replied to Scott Adams's topic in Publications & Publicity
I have been drinking Christopher Bean Coffee for years, their flavor blends are all gluten free and even the Rep I talked to has celiac in the family when I was asking about it. Further testing proved it safe. Their dessert flavors are very good,
