    Well I had been doing great but my Ulcerative Colitis flared bad the past few days.
    I have many suspected culprits as I tried a few new things and changed up my diet quite a bit the following are the suspects.     So I have found some other issues I have found with my fracked up gut I thought I would share....rare anyone could relate to some of these but throwing it out there.

    For me my body gets moody after being sick, eating something it disagrees with, or for months after a exposure.     SO today was a mixed day.

    First thing this morning my emotional support animal died, I talked on a forum for his kind and his quick and sudden death was said to sound like he ate something poisonous.     2 weeks of working on it and I got the recipe down, just featured them at a farmers market and sold out.
    Makes 10 4" bagels. in grams, so you can half or quarter the recipe.

    This one uses a really thick heavy batter to make the breading stick better. For the panko I used seasoned pork rinds crushed enough to be breading with a extra 2 tsp of bbq rub mixed in but you can use baconshair pork panko and season however you want.

    4 oz pork rinds crushed into a powder like texture(or pulsed in a food processor with the seasonings)

    Well I started off doing breakfast bars at the farmers market yesterday.
    A unforcasted thunderstorm rained it out but I ended up with 6 orders from regulars for curbside pick up lol. I still have all my baked goods in the display fridge in the store front window but low sales there. >.< I did go ahead and chop up toast, and currently dehydrating the bagels into bagel chips. I think I will be eating waffles, turkey sausage, paleo bread, and cookies for the next week...

    So two weekends ago I was sharing a room in a hotel with a couple for a convention I was attending with my normal chef kit set up and brought tons of baked goods, full on meals, etc all Paleo and gluten free enough for the 3 of us 3 meals a day for 4 days with snacks (about $150 worth). I set ground rules of no corn, or gluten in the room since I react the worst to them....well it went pretty bad. They could not seem to grasp this concept and kept bringing in and spilling corn...

    So been playing with a few things and testing some waters.

    Recipe wise I have 3 different chocolate chip cookie recipes I do now for my bakery the last 2 developed these last few weeks, one puffy soft cookie, one flat soft slightly chewy cookie.     I make this dip for veggie trays when catering, it taste just like buying the ranch dip packs you used to and mixing with sour cream.


    1 16oz tub Plain Unsweetened Vegan Yogurt (I use Kite Hill)

    So in a effort to make meat loafs I have gone through several versions with 3 I still do I use 2 cooking methods depending on time, I can cook normally in the oven in a meat loaf pan (made to drain the grease) Or I can use my instapot version and do it in smaller loafs each a bit over 1lb 2 at a time.     Almond Butter Muffins
    1 Cup (240g) David's Paleo Kitchen Almond Butter of Choice (Warmed Slightly See Notes)
    3 Large Eggs Whisked (room Temp)
    1/4 Cup (50G) Swerve Granular

    So I had my follow up appointment with my new GI to go over my pathology report. There are no signs of celiac or UC, he said there were no medications he needed to prescribe and that my treatment regime was working great. He suggested my random digestive issues could be a new sensitivity or a intolerance or even hormone related like with insulin.

    I often suggest making crustless quiches to people, here is one of the base recipes I have used.
    10 Slices of Turkey Bacon, Cooked and chopped (I did a mix of crispy and chewy cooked)

    Well, may is Celiac Awareness month lol, so I am offering discounts at markets I am setting up at this month.     Well, I saw a new PCP about a month ago, completely useless, and then charged me a ridiculous co-pay I could not even afford (I got out of this on a technicality on their part).     To Frankenstein, a dish in the name of experimenting is quite common with food. I recently did something with funny results and lessons learned I think some might find amusing.
