  1. Well good news, Covid is a respiratory virus....it will not cause stool changes like that. Your immune system will be stronger once off gluten when celiac, your immune system has probably been actively fighting and destroying your intestines for months or years. Many celiacs start seeing changes in their immune system and reactions to gluten and other foods...
  2. 500F+ destroys the protein, a oven self cleaning cycle should achieve this, I would also suggest a very heavy cleaning with soap, and reseasoning it from the start. I personally just got all new ones , heck misen just came out with a great carbon steel pan, (imagine if you had cast iron with the smoothness of stainless steel...you seasoning it and it is...
  3. Could be a issue with the ratios of sodium, magnesium, and potassium. It could also be a inflammatory response to something else in your diet (Dairy, Soy, Legumes, Corn, or perhaps grains) or high sugar intake. Try keeping a food diary, with an elimination diet.
  4. Good Dees makes mixes with Sunflower seed flour nut free and diabetic friendly. https://www.gooddees.com/collections/nut-free-mixes
  5. Depends on what flours and sweeteners you using, I use Almond and Coconut Flours with Swerve Sweetener. Although I have been experimenting with Pecan Flour recently.....makes great chocolate chip cookies.
  6. You should probably look at the ingredient list on them, and try each one by themselves in small amounts with a safe diet. We do normally suggest that people avoid processed foods for a while, as it is much easier to read labels and managed the diet when foods you eat consist of only 1-3 ingredients. Also helps to forget the old texture and taste of gluten...
  7. I think it was 10% of celiacs react to oats regardless....took me a while to find I was one. Also I ended up with a whey allergy and lactose intolerance so I have to use nut based milks myself. Another concept is some newly diagnosed celiacs have SIBO, where bacterial overgrowth set in the damaged small intestines. This would trigger gas and bloating...
  8. Recovered fully from having the surgery removing my appendix in 12 days...literally back to lifting weights (no more then 40lbs for the first month is my personal set limit)....day 1 after I was back to 10 miles a day on a under desk elliptical...but I go crazy if not moving. This Virus has shut down the farmers markets, and only had 1 order in the past...
  9. While celiac is genetic many have the gene dormant, and quite a few end up having the activated by getting sick, food poisoning, bad virus, or pregnancy. Your food poisoning incident could have turned the gene on. In order to get tested you have to keep eating gluten and get the blood test done, as mentioned you can avoid the hospitals for now if you...
  10. Many find they need their own set of cookware and labeling them so they do not get used for gluten (IE choosing certain colors or putting colored tape on jars of condiments and pan handles that are yours. But CC can come from many sources, crumbs on the counter that got on food being prepared, scratched pots/pans, wooden spoons, any flour used in the kitchen...
  11. I do well with Julian Bakery Egg White Protein, and Beef Protein Isolate, Jarrow Pumpkin Protein, Bone Broth Protein from ancient Nutrition, Collagen from Ancient Nutrition, Along with Collagen from Neocell, origain, and a few others. I have also used many others in the past but stopped for digestive issues. But they are MRM Elite Plant Based, Nutra Key Vegan...
  12. I know some people that do the full on carnivore thing and beef is their primary food source, they say to eat the liver and other organ meat from it as all the vitamins you need in it. I know several podcasters etc. that have posted images with the nutritional profile of different organ meats, and animals compared the vegetables and fruits....the organ meat...
  13. Celiac is in the small intestines...But I ended up with Ulcerative Colitis a few years after my Celiac Diagnosis. Many often have multiple Autoimmune issues. I wonder if the small intestines moving stuff through too fast for years with Diarrhea could lead to issues in the large intestines? Just a thought.
  14. So with the COVID apocalypse going on I been working on some bucket foods that are safe for me first on the list was pop tarts. I filled these with Miyoko dairy free cream cheese mixed with a bit of stevia and Swerve Confectioner. I plan on later trying a version with mock apple pie filler (minced stewed chayote squash mixed with swerve, lemon juice, and...
  15. I also keep seeing mixed references to how long it can live on surfaces some say a few hours, some say days. But I managed to get 1 carton of egg beaters and one of egg whites at walmart today...last 2. Also got some Bakers, Unsweetened pure chocolate bars, and canned coconut milk to keep my fat intake high for my ketogenic diet, not to mention they...
  16. In the current world affairs there are 2 sides, one getting tested would not only involve the blood test ( you can always opt for one of the good mail order ones) but to confirm and get it on your record requires a endoscope and biopsies to check for damage. The latter would be hard to book with all the hospitals dealing with the covid virus. But on the other...
  17. Sounds like many of my issues that I dealt with after diagnosis. I still have to go easy on garlic and onions (falls under a food sensitivity/intolerance) SIBO sets in on damaged intestines easily, we see it often. You have to mostly starve them, they feed on sugars, starch, carbs in general. The Keto diet for a month or two should level the playing field...
  18. Went to the store for the first time in weeks today, I first went at 3 am to our 24 hour walmart to avoid the crowd and because the pain from the surgery makes me hostile, but they were closed. I went back at 8am and all the egg beaters and egg whites I normally get were gone...all the large cases of eggs were gone and I had to over pay for 2 36 cases, all...
  19. Doing much better, just sleeping downstairs on the couch and popping pain pills with overlapping doses every 4 hours. The bigger problem now is that my city and the ones near by all closed down every restaurant, bar, lounge etc, and canceled the festivals and farmers markets. So I am stuck invested into this years market and completely screwed on income...
  20. 3-5 days optimally in the fridge throw it away after a week, Make it in smaller amounts with only what you can eat in a few days, Do note what you add to it can shorten shelf life back making it more prone to bacteria and mold,
  21. They got it out, hell almost more painful now, apparently my intestines where wrapped around the appendix and not where they were supposed to be so they fixed it when they were removing it,,,,,BTW this hospital can not offer anything for gluten free options so I am stuck without food, trying to see if I an have my father bring me something from home.
  22. So pain started last night in my lower right abdomen with vomiting and fever. Took tramadol to sleep then woke up taking it again in the morning and vomitted when I tried eating. 99F fever Drove mysel to the ER got blood work wih raised white blold cell count, cat scan showed it was my appendix. Ambulance ride to Baylor and going for surgery in 3 hours.....
  23. Truck Update, Took it to a mechanic and found it has low compression on those two cylinders so not a injector issue. The mechanic said we needed to change the engine to a 2015 model, saying the early first gen motors had issues with glow plugs breaking and locking up and breaking crankshafts. Unfortunately I do not have the money for a 7-8 thousand dollar...
  24. Same that and Thrive Markets are the only two I really never had issues with.
  25. As mentioned if your immune system is actively fighting gluten having to fight a war on two fronts would make it worse. IF gluten free I would theorize our immune systems would be stronger then most peoples I deal with my immune system attacking my body and allergies very often but last time I got the flu it only last a few days when everyone else was...
