Ataxia, I ended up with gluten ataxia and for me it exposures caused numbing of the extremities, damaged the nerves to my pancreas and digestive system, some brain damage and would have other motor control issues randomly after a exposure.

IMO I Agree with this, gluten and grains are not meant for humans, and we should follow the paleolithic (Paleo) diet of our ancestors for better health. The Biopsy is needed to check for damage to the small intestines and confirm how much damage you have done to your intestines. It gives the best idea to the stage of damage, as you can not tell this from a blood test. I am keto myself and paleo (Diary and Grain Free). Never went to a "gym" always felt on edge there and only used hotel ones at 4am when no one else was. What invested in a few years after I got diagnosed was a set of resistant bands, a stationary bike (late got a under desk elliptical, and I found a Bowflex Home Gym Extreme 2 for 250 on ebay in great shape. I am a fan of both products but use them a bit differently. I do not eat out anymore except at Across the Pond up in North Richland Hills where the owner has celiac in the family. The way I use the Nima is to test new products I am trying packaged, like a new brand of a baking ingredient, spice, marinade, etc. Also always test a bit from bulk orders...

Running a gluten free bakery before starting my catering taught me to only say my stuff is paleo unless they mention gluten. If I say gluten out right they will not even try it...I had so many people say they like their gluten but not even know what gluten was..... With ataxia avoidance is the only way to prevent it. I ended up with similar diet issues and allergies, I went to the paleo diet of just eating meats, nuts, seeds, veggies, I omit stuff like sweet potatoes, starchy veggies, and fruit since I also can not have carbs. But look up paleo recipes since they do not use grains most recipes are gluten free or easily modified.

Try Ground Flax Seeds like by Gerbs Allergen Friendly Foods. Whole flax seeds do not break down well and can clump up.
