Change of career post diagnosis?
Ennis-TX replied to Keight's topic in Introduce Yourself / Share Stuff
>.< Well since cooking all my own food and trying to recreate things from my past in a safe version became a passion I was good at I started selling gluten free baked goods at farmers markets to help pay for my new diet. Sorta evolved over the years to paleo and keto, and I make baked goods, almond butters, and during the market I now set up a tent... -
Magnesium deficiency was my issues for the burning feeling, also had some other muscle issues related to it. Still to this day I take Magnesium and a Electrolyte replacement powder. B-vitamins and Vitamin D are other things to consider. B-vitamins are sprayed on or added to most gluten food to "enrich" them, gluten free foods do not get this treatment so...

Sleeping my life away!
Ennis-TX replied to Keight's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Took me over a year to start weights and stationery bIke like I used to, and I eased into it. Coffee...try it again in 3-6 months, start decaf and brew weak. The social and traveling aspect is essentially bring your own goods all the time and learn to host. On the bright side your not dealing with constant D and more allergies. Give it time. -

Whole family is diabetic, and I have a corn allergy so no more cornbread or black eye peas. We also had a half pound of smoked Ham left over from christmas. Lol my dad hates turnip greens, I love them sauté with bacon. PS the black Eyed Peas luck thing is complete BS, 2019 was proof of that. -

So for New Years Lunch we are mostly doing snacks, so a good list of ideas for others. Ham and Cream Cheese Roll Ups As a kid my mother did tortillas with cream cheese spread then ham and rolled up. Now days I do Applegate Deli ham, soften and spread Miyoko Dairy Free Cream Cheese and scallions on it thick on one side to fill the center when rolled... -
Sleeping my life away!
Ennis-TX replied to Keight's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I still need to take Liquid B-vitamins & vitamin D in the morning to operate fully, and a bit of ketone powder (Ketones really only help on a ketogenic diet) I pace and do elliptical to get my heart rate up first thing in the morning, then exercise, sometimes taking a preworkout to get me going. Followed by a protein shake with healthy fats before fixing... -
Eggnog, Dairy Free, Sugar Free, Low Fat
Ennis-TX posted a blog entry in Gluten Free and Specialty Diet Recipes
So here I was wanting a healthy take on Eggnog I could drink without stomach issues, this is a recipe for HOT eggnog as cooling it leads to separation without an emulsifying agent. Been drinking this for days. 2 Cups Cashew Milk, or thick and creamy almond milk (HEB Organic Almond Milk) 2/3 Egg Whites (pasteurized... -
Food Well I found a new favorite meal, wild smoked salmon and nova salmon. WholeFoods has them 30% off right now, I love that flavor, made little snacks by putting them squares of nori with miyoko cream cheese. LOVING THEM and no digestion issues. Been loving that I can eat thin bacon as long as I pull all the fat off, best is to buy the hormel precooked...

Did You Know? Gluten in Cosmetics, Lotions and Makeup
Ennis-TX commented on Yvonne (Vonnie) Mostat, RN's article in Winter 2020 Issue
Something to think about here, how often do you touch your hair, skin, or face before say taking medicine, having a snack, fixing food, etc.? How often does a few strands of hair blow into your mouth on a windy day? If you have gluten in your skin care, lotions, or hair products you will consume some tiny mounts via cross contamination eventually. And the...- 7 comments

Random bit of info I learned years ago, I can not get vaccinations, due to bad reactions to the preservatives and the adjuvant used in them. My immune system over reacts to the adjuvant, and has issues processing the preservatives (genetic) Do you allergy shots utilize any forms of these? Or is it just a antihistamine in a saline solution? And to a...

Celiacs are prone to get new food intolerance, sensitivities, or allergies among other issues. It is also not uncommon to get other AI diseases or certain issues. We are not doctors but if you give some symptoms perhaps someone can give you some ideas you can consider and go from there with talking with your doctor, nutritionist or trying elimination diet...

Coeliac disease and lactose intolerant with severe bloating
Ennis-TX replied to Donna 21's topic in Meet Up Room
It could just be gas and bloating, high fiber diets, diets high in carbs/starches/legumes, can cause bloating. SIBO or Candida can set in on damaged intestines and feed on sugar/carbs and cause bloating distention. The Vegetarian diet might be backfiring there, have you tried a low carb diet of primarily meats, eggs, and some leafy greens? The lower fiber... -
Could it be caeliac?
Ennis-TX replied to Karaokequeen's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
First this response is from my own opinions and observations and I am not a doctor. I presented with random GI issues most my life and various little things I never knew were realated and took for granted. Like you I was constipated going once or if twice a week sometimes over 7 days. The constipation and the tingling needle skin feeling I chock up... -
Figured I would post the sugar free dipping glaze and the royal icing I use in my bakery. The icing can be varied by liquid content from a heavy assembly icing, a decorating icing for piping, or a spreadable one. These icings are variable as they are low fat and sugar free so I can use them for various clients. Also I tend to use grams for these Dipping...

Been having some odd simple meals as of late, funny I found these chicken & apple sausages at Walmart great value brand that are gluten free on sale. I find I can eat them if I remove the casing (I do not do well with casings on this kind of meat) but they digest well this way. I served them up yesterday to my cousins daughters who were staying over,... -
Continually developing new intolerances
Ennis-TX replied to sammbamm179's topic in Food Intolerance & Leaky Gut
For years when ever I got glutened I got new issues , I ended up with a whole list of issues and food allergies intolerance issues. Interestingly quite a few intolerance issues have gone away over the years and the allergies wax and wane. I practically live on antihistamines and DAO enzymes to deal with them. https://www.mindbodygreen.com/articles/are-food... -

Tracking Down the Food Culprit
Ennis-TX commented on Ennis-TX's blog entry in Daily Life and Compromising
Yep moderation like a tsp or two to a glass then drink with a straw so it does not erode enamel. I slowly been weaning off PPIs and I got off them middle of my UC flare. -

With something like this you can source individual ingredients and try them by themselves. Authentic Foods has both Tapioca Flour/Starch, and Xantham Gum. You could say get both then just try a bit in water (let it thicken as both will) then have a bit, do be careful as they expand and thicken in liquids so give them time to set up before consuming. Time...

Not Healing
Ennis-TX replied to CharlesBronson's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
With a standard oven true, Just foil line your dish and cover with a foil tent/lid if you want to be sure. EXCEPTION. if you have a newer convection oven then no, they have a fan in them that circulates the air and can be a issue with CC via flour dust and food particles. I would avoid these and if you do use them ALWAYS cook your food covered tight with... -
Tracking Down the Food Culprit

I tried the betaine but it just made the vomiting really burn, I might try again. The lemon and lime are iffy, but I do drink them to break up my congestion from allergies...>.< But after meals might be fun...take with the electrolyte powder orange flavor and I bet it can taste like a margarita. I am just now trying ACV, it seems to really improve... -
Not Healing
Ennis-TX replied to CharlesBronson's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Another limb to grasp at, like cycling lady I ended up with other AI conditions like Ulcerative Colitis, and at one point a candida issues, and my immune system got my nervous system with gluten ataxia which affected my pancreas and stomach...still dealing with issues in that regard even with healed villi. Those bagged veggies are probably a issue, I... -

Tracking Down the Food Culprit
Ennis-TX commented on Ennis-TX's blog entry in Daily Life and Compromising
I have considered the AIP diet but I can not eat carbs or most veggies. Most of my calories come from seed butters/nut butters, protein powders,m and eggs, and the meats they allow all make me vomit even unseasoned Well not tried fish, turkey, or a few other foods. Hell might try it in January, my original plan to do a carnivore keto diet got kicked off...
