  1. First this disease is genetic, if your mother has it then you can develop it at any point in your life, many find a illness or bout of stress activated the gene. Lactose intolerance is common with this disease as the tips of the villi produce the enzymes to break it down. So as it progresses many lose the ability to digest lactose, it does sometimes come...
  2. I would personally not use them nor would I use them in my gluten free catering business. Gluten Free Watch Dog did some testing a few few brands of "Wheat Straw" products, They could not detect any traceable amounts of gluten but their were complications with the standard testing methods but from what I gathered they never had anything in the detectable...
  3. Most the pain resolved having it popped back in, then on some Tramadol. I am much better I just can not do any type of shoulder, back, or chest workouts for 4-6 weeks til it fully heals.
  4. Oh wanted to give another leftover tip, dressing waffles. I took some leftover dressing (few cups) mixed in a egg (you might try 2) then just enough left over chicken stock to moisten it a bit. I then mixed in some browned breakfast sausage and put it in a waffle iron.
  5. Most the pain went away when it popped it back in, after that it was thanks to tramadol.
  6. The muscle issues sound a bit similar to mine, look up magnesium deficiency, and gluten ataxia and see if those ring any bells. The testing for deficiencies is a base line, issue is they test for bare minimum you need. A active person will deplete magnesium stores MUCH faster and needing to supplement is normally a must. Celiac, has hundreds of symptoms and...
  7. For thanksgiving this year I injected and smoked a turkey, the meat was wonderful. I also did dressing again, my green bean casserole with the french onions made in a air fryer, and mock apple cobbler out of chayote squash. My bakery/catering business donated 140 cookies, 9 loafs of pound cakes, a lemon loaf cake, mock apple cobblers to my churches community...
  8. I have a coconut flour based bread recipe and paleo stuffing recipe on my blog, I just made it for thanksgiving. It is based off my grandmothers, I just used my own bread for corn bread. Perhaps you can enjoy dressing again come Christmas?
  9. I am going to write out several tips and options to making a safe prep area, and ideas for making your own cooking area. I used to live with gluten eaters and around the end got to the point of setting up a separate cooking area away from the main kitchen to maintain safety. First tips to start off cheap, Cleaning out a microwave well, and investing...
  10. Amusingly this is inspiring me to write up a new post about managing in a shared environment.
  11. This is the kind of nightmare that made me move to a dedicated gluten free house. Seriously some of those incidents left me with PTSD and I am still paranoid and have some odd habits.
  12. So this is a remake of my grandmothers Dressing but using my paleo breads and changing out a few ingredients to make it paleo. this recipe makes a half pan 6" deep First the modified Paleo Bread made Drier and with some additives MAKE 2 OF THESE LOAFS Makes a 2lb loaf in a large bread loaf pan (5x9") 172g Coconut Flour 2 tbsp Psyllum Husk Powder...
  13. Yeah my corn allergy is annoying, luckily I find some products are processed to remove the proteins (Erythritol) and stuff is hit and miss. Citric acid and Xantham gum from Beets by example does not make me sick, but you honestly have to research, call, email like crazy to find this stuff out. Maltodextrin is annoying, as I they sometimes remove the proteins...
  14. You mentioned blood test, what kind of blood test and do you have a copy? It might have been one of the celiac blood test and if anything on it was high even just barely that is a postive. Most doctors are quite misinformed and ignorant about this disease, they also hate to diagnosis it as there is no money in it for them (docs get paid for every RX they...
  15. I posted mine but it is for a smoked turkey on my blog. For a standard one I would do something like 16oz Chicken Stock 2 tsp garlic powder 2 tsp Onion Powder 1-2tbsp Salt and take 1-2 sprigs each of sage, rosemary, thyme and bring to boil then simmer 7-15 minsfor a bit to infuse before injecting Many would say add 8oz of butter to this, but me...
  16. According to Gorden Ramsey you rest a turkey 2-3 hours before carving.
  17. So this year I decided to go special first I am Spatchcocking the Turkey so it cooks faster (Cutting out the spine and splaying the turkey open so there is no internal cavity and it cooks faster). Second I am smoking this bird over hickory and injecting it to keep it moist, I will cover my rubs, and injection in this post so others have a reference. Turkey...
  18. Custom injected and seasoned my turkey and smoking it now. I will post my new method this year. Also working on some crazy ideas for a low carb cobbler/crisp me and my diabetic family can eat, >.< Testing out using chopped low carb squash stirred and cooked in Swerve, Cinnamon, and then using gelatin to give it that gooy sugary pie filling. I have...
  19. So since the cold front rolled in last month my allergies have left me coughing up stuff, congestion and sinus pressure, this happens every year. Well Sunday I was doing chest/shoulder workouts with butterflys and DB presses, and I started coughing and heard a pop then extreme pain. Monday I went to my massage therapist thinking I pulled a muscle...she...
  20. Many find the Xantham gums to cause issues, and they made from black rot. Another issues with gluten free flours is often they rely on starches heavily and grain flours, these are more easily fermented in your intestines and cause gas. They can also spike your blood sugar since they are high glycemic and one of the main reasons why the GFD gets called unhealthy...
  21. .....hey seen that before then low and behold it was spent brewers yeast, but also seen it come up to be safe. But how the hell do you not know the source of such a ingredient?! I am paranoid and iffy with companies, but I also have a really random corn allergy and pretty severe whey allergy. I have to email and ask the source on everything then sometimes...
  22. Bit of a trick I have learned with using Pork Panko Breading, toast the breading in a skillet til it just starts to turn darker and is a bit more crispy before using. It makes the breading crunchier and give baked versions more crunch akin to frying. Working on a Chicken Version but trying to improve the egg wash/batter.
  23. My thoughts, I recently had a really bad issue with my Ulcerative Colitis flaring. I could not tolerate any veggies without gas, bloat and pain for weeks, chicken was noticeably harder to digest and passed sometimes in stool. Fish was my primary food source for a few weeks it is a softer protein and easy to break down. Beef...it had to be crockpot or preasure...
  24. Hmm bit of a hit and miss thing GFWD had something else on another company using Yeast Extracts on stuff and had a news article on it. This is one of those things I would like to ask her to see about testing as it is in a odd grey area. You really should contact pioneer and request the source of the yeast extract. The grey area comes from yeast extract sometimes...
  25. Umm that is a bit off, below 20 parts per million or less then 10mg a day is said to be safe, but many can react to below that and even tiny amounts of flour dust. It varies from each person. Your body/immune system now thinks gluten is a foreign invader like a germ....it reacts to germs. Think on that, the issue is how much is picked up on in your intestines...
