  1. Hubs just improvised some "cookies". He mixed rice chex, chocolate chex with some peanut butter and corn syrup and rolled them into balls. It's really good. Kind of like a special K bar but softer and no frosting, but the chocolate chex gives you the chocolate frosting taste!
  2. Hubs wants to grill some fish and make fish tacos. I don't do fish so I'll cook up some chicken. Went to the farmer's market so I'm going to make http://ifoodreal.com/parmesan-zucchini-sticks-recipe/ for lunch.
  3. I tried the Schar shelf-stable bread, wasn't impressed. It's ok toasted but I like Udi's toasted better.
  4. Amy's Shepard's Pie. It's not bad. I was busy all day so I didn't take anything out for dinner so it works.
  5. Thanks!! I bookmarked that page the list was on!! Does anyone have a substitute for the French Fried Onions that you use on Green Bean Casserole and such?
  6. No rush!!!! I won't get to any baking anytime soon!! Good luck with the freshman thing. Pack 1/2 as much as she wants to, unless it's a boy, then add stuff to the pile
  7. Post away!!!! I feel like I'm learning to cook all over again--even though I haven't had to change THAT much, it's making me think a lot more in the kitchen then I've had to. I had some gluten-free waffles this morning and normally I would have syrup but because of my calorie restrictions, I had to come up with something else so I warmed up some fresh fruit...
  8. Hubs' Dad gave him $20 when he dropped him off freshman year of college....he came home with $19 of it at the end of the year.. He HATES to spend money . He likes to bake mostly cookies, bars, that kind of thing. He said this is a good excuse not to bake for a while because we both could stand to lose a few pounds . A good friend of mine is diabetic...
  9. So far no other food issues so that helps. I don't bake, hubs does I don't know what he will do when he gets the urge to bake again. He will drop dead of a heart attack if he sees flour is $13 LOL. He is kind of a by the book baker so if it says 10 minutes, it's 10 minutes--except for the things he cooks most often--so we will see....
  10. Cooking gluten-free is certainly all about learning to cook all over again. It's going to be a lot of trail and error I'm sure.
  11. Ronzoni brand. The box said 7-9 minutes and I cooked it for 8. I generally cooked my gluten stuff for the middle time like that and it was fine .
  12. Ok, the gluten-free spaghetti was edible. It's a little sticky but tasted ok. The Schar baguettes were ok, not wow but I'd eat it again. Way better than their sandwich bread!
  13. I was hoping to find some bread. They did have some "scotcharoos" which I call Special K bars, but they were made with rice chex . That was the only gluten-free item they had left today.
  14. Stopped by our Bakery and asked how a bakery does gluten-free. They have a separate kitchen that they make their gluten-free stuff in. She said they do that at the end of the day, after their main kitchen has been cleaned. She said they don't "certify" the gluten-free and if you are allergic or super sensitive, it might not work but she said they haven...
  15. I'll keep an eye out for those brands. So far I've only seen the Schar and Udi's here. There is a bakery in town that advertises "gluten friendly" so I will have to stop by and see what they have. I also saw a Facebook post for a woman that sells gluten-free baked goods at our little farmer's market in town so I'm going to stop by on Saturday for those...
  16. I had a margarita . I had coupons for Schar products so I got some of their bread for our BLT's....not my favorite gluten-free food so far....the Udi's we had was much better. I'm going to try the Schar with peanut butter for breakfast and see how that goes.
  17. I'm making BLT's tonight I think. I haven't had any all summer, tomatoes are late this year!

  19. I'm making rotisserie chicken tonight. I'm just making thighs, not a whole chicken though--it's just the two of us . My new gluten-free toaster oven has a rotisserie and boy is that handy!! I'm going to try a beef roast on that next week I think too. I have to finish cleaning my cupboards and then make a grocery store run.

  21. I probably wouldn't eat that many either, but I'm going to share a box with another gluten-free family . I was wondering about shipping too. Let me know if you do order and how they survive the trip!
  22. Red Robin sells individually wrapped Udi hamburger buns in bulk . Just contact the manager. They come 50 to a box.
  23. I was waiting for my follow-up appointment with the GI after getting diagnosed last month and yes, technically that is done...as of this past Tuesday so no I have to be gluten-free. I did cheat. It's my favorite pizza anywhere and now I won't be able to have it again. They are not gluten-free and really not set up to go that route anytime in the near future...
  24. We ate at that amazing restaurant again last night . They have a hot stone meal, kind of like fondue but using a hot stone to cook on instead of a broth or whatever.   25. These sound amazing. I copied the recipe down!! We ate at Noodles and Company. Their gluten-free noodles are pretty good!
