I wrote this post about vitamin deficiency testing which is not always an accurate measurement of vitamin status. It's been my experience that doctors may routinely test B12 and Vitamin D, but not thiamine or the other B vitamins. I agree with Trents that malabsorption due to villi damaged by Celiac Disease is one reason deficiencies of folate, B12, and iron persist after a gluten free diet. Another possible reason could be that Celiacs don't choose foods high in folate, B12, and iron, foods like liver and green leafy vegetables. Wheat flour is legally required to be enriched... -

DH is aggravated by Iodine. Try cutting iodine sources out of your diet. Iodine is found in iodized salt (switch to Himalayan Sea Salt), eggs, dairy, shellfish, and seaweed among others. Hope this helps! -

Glad to be able to help. I would like my experience to be of value to others. Jade's reaction to the single vitamin tablet suggests to me it is thiamine deficiency (with other vitamin deficiencies as well). Celiac Disease causes malabsorption which results in malnutrition, vitamin and mineral deficiencies, which can have the same results, the decline in brain function your daughter exhibits. Remember to discuss all the vitamins and minerals with your doctor. People rarely have a single vitamin or mineral deficiency. If you're low in one vitamin or mineral, you're probably low in more. Keep us posted on your progress!
