  2. Yes, once triggered by gluten, the immune response can last awhile. Antigluten antibodies increase with exposure to gluten and may remain for months, but they should come down without repeated exposure. The antigluten antibodies mistakenly attack our own cells. Keep us posted on your progress!

  15. I wrap half of the loaf in waxed paper, put it in a freezer safe plastic zip lock bag, and chuck it in the freezer. The rest of the loaf or several slices, I wrap in waxed paper and store in original packaging or another zip lock bag in the fridge. I can't eat a whole loaf before it goes moldy.
