  1. For on-the-go, I eat nuts, Kind bars, yogurt, fruit, veggies with hummus. Costco has a lot of gluten free snacks - like trail mixes, granola bars etc And nuts.com has a good selection of gluten free items as well.
  2. Taco Tuesday, baby! It's a thing..... We eat tacos and/or taco salads so much here!. I also make beef and chicken fajita meat and serve it with black beans, rice, guacamole - think homemade Chipotle bowl. Cajun red beans with chicken and sausage - I make it in a crockpot and serve it over rice. Now that it's getting cooler, I have also been making a lot...
  3. Just curious.....Are you Catholic? Episcopalian? There might be a difference depending on which church you attend. The Benedictine sisters make a low gluten host. Here's the link.... https://altarbreadsbspa.com/altarbreads/low-gluten-breads/ glutenfreewatchdog did an article on the low gluten hosts recently. She tested a...
  4. Hi Iceland girl- I'm sorry this situation is so depressing right now! Cholesterol is a complicated issue. Remember the reason doctors want to treat cholesterol is that high cholesterol has been associated with heart disease and strokes. Of course, so have a lot of other things like genetics, weight, smoking, etc. Because these are the #1 and 3 leading...
  5. It sounds like you ordered your pizza from a restaurant. There is a very good chance the pizza you ate had gluten in it - cross contamination. Maybe from a shared kitchen, the utensils etc. It is almost impossible as a celiac to eat food made in a kitchen that cooks with flour. That pretty much eliminates pizza places, bakeries etc. There is a steep...
  6. I'm sorry you are having a hard time. I did too! There are definitely things about my pre-celiac life that I am still mourning the loss of. It gets better but it doesn't go away. I gave myself a bit of leeway at the beginning. When I messed up or ate the wrong food, I didn't freak out. They say it takes about 6 months to really get it right, so...
  7. Remember that this nurse practitioner is not the gastroenterologist. They are not the same people. Just because they represent the same office does not mean they have the same knowledge base. The gastroenterologist went to school for 11 years while the NP only 2. That's not to say that there aren't great NPs out there, but they provide a different skill...
  8. I don't think it's weird at all. I am this way about ice cream....I can't buy a 1/2 gallon because it will be gone in a couple of days! I have to buy small quantities - either a pint or even the individual cups and bring them home one at a time. I get this way when I am very hungry. I wonder if this is just you being underfed because of your food intolerances...
  9. Hi- The deaminated gliadin IgA is very high. This test has a 97% specificity (that is my understanding at least). That means if it is positive, there is a 97% chance your son has celiac as well. And hypothyroidism and celiac very commonly are seen together. Even with normal appearance on the biopsy, there is a pretty good chance your son has celiac...
  10. Hi Severe- I have 2 thoughts- One is that there are other formulations of SSRI/MAOI. Emsam is a MAOI. It is a class of drug that sounds like you haven't tried before. It is administered through a patch on the skin so no gluten exposure at all! I have a friend who tried a variety of SSRIs over her life and finally found a great response in Emsam...
  11. Yes! The designer did a good job with the human body. It never ceases to amaze me. I am certainly not advocating for follow up endoscopies. I posted it only for information. For me, I see people advocating for followup labs if you are still having unusual symptoms to see if it could be the celiac. But according to this study, if the labs are negative...
  12. Hi and welcome! Any time you eat in a restaurant or kitchen that prepares food with gluten, you have to be prepared for cross-contamination. Every kitchen and every entree is a different situation. For example, eating in a kitchen where a lot of flour is used, there is a good chance that flour will get into every dish to some extent. Restaurants...
  13. Here's an interesting article from Gastroenterology this month...... http://www.gastrojournal.org/article/S0016-5085(17)35624-X/pdf "This meta-analysis demonstrates the limitations of celiac antibody testing as a surrogate marker for mucosal recovery in persons with celiac disease on a GFD." "Recommendations to monitor tTG and/or EMA anti-...
  14. The first 2 months of grocery shopping were tough for me! I went to the store 5 times a week. I felt like I was learning how to shop all over again. I read labels and tried to learn what everything meant and what wouldn't kill me. I do eat a lot of whole foods, in general, but I use condiments, spices, etc so I was looking into everything. You can...
  15. I'm so sorry. Nursing school is rigorous enough on top of all this stress. And, kudos to you for cooking regularly even in school. I've been through a lot of school and I never managed that. I can see how it feels hopeless to try and change your roommate's behavior - almost like an insurmountable hurdle! After reading all of these followup posts,...
  16. I'm sorry you're feeling poorly. As I read the good advice you already got and your message, I was wondering a couple of things. 1. You mention your very strict schedule that keeps you on track but it says eating decently well but it doesn't say cooking. If you are eating out a lot, that is clearly a place where you could be getting cross contaminated...
  17. I had my endoscopy first - I was anemic and having Restless leg syndrome and palpitations. The doc came out and said "You've got this scalloping of the intestines that we sometimes see in celiac. I took biopsies. I'll order some blood tests" My antibodies were off the charts high. I had no GI symptoms. Pathologically, celiac is divided into 3 stages...
  18. I agree with the Betty Crocker Brownie mix. You can barely tell the difference. It is available in a lot of grocery stores which is nice. Immaculate cookies makes pre-made dough that you buy in the refrigerator section of stores. They are really good (although I have only made 2-3 of the cookies because I usually just eat the dough raw. ) They do...
  19. This is from Stanford Medical school on the criteria for diagnosing celiac. The Modified Marsh Classification of histologic findings has been used to grade celiac disease Simplified systems (Corazza, Roberts, Ensari) may be more reproducible Grade A/Type 1: increased intraepithelial lymphocytes but no villous atrophy Grade...
  20. I'm curious if you contacted the company on this one? I always assumed that if it was certified gluten-free then it was probably OK..... If they are certified, isn't an outside agency coming in and doing the testing?
  21. Actually, I learned recently that there is a website that teaches people how to do it on their own at home. I was so de-cust-ed! I can't even imagine doing something that we know so little about (and is sort of gross) on your own. But I am very curious about this and hope there is some research on it in the future. Oh how I would love to eat a real hamburger...
  22. Hi- I have pondered those recommendations as well and here are my thoughts. Yes, your cast iron skillet, the little crevices in wooden spoons and plastics knife handles all have traces of gluten currently. However, that is a finite quantity right now. As you cook and use these items with gluten free foods, the little traces that are there will cook...
  23. I wasn't sick either and was diagnosed at 42. I have 2 kids. It is overwhelming at the beginning but it is doable. Every family is different so you have to find a system that works for you. Start with yourself and focus on eating whole foods at the beginning. Don't go out and buy a ton of gluten free crackers, cookies cakes etc. Eat meats,...
