How Soon After Gluten Do You React?

I know this is an old question but I'm new to Celiac fun. After reading some of the older replies I am questioning if I accidently ate gluten in some Eckrich Smoked sausage a couple of days ago and the gut reaction just hit me. I also had a bad headache the next afternoon after eating it in my red beans and rice dinner made at home the night before...
