My opinion: Why bother? It's not like people who eat wheat are healthier and happier. Keep in mind that wheat has been shown to be addictive. I remember, but not when or where, a person in the wheat industry commenting proudly that wheat is more addictive than potato chips. (bet you can't just eat one)

Dapsone has some potential side effects that to me are scarier than the rash. If you are getting better without it I would wait. Even with the Dapsone it can take 3 months. It would be interesting to compare the nutrients in your gluten diet before the one year GFD and your gluten diet that ended in DH. -

For some vitamins, like Thiamine, the only way to tell if thiamin deficiency if causing your symptoms is Hear! Hear! I discussed with my doctor the fact that I've been on 10,000 IU vitamin D3 daily since 2015. While Covid is terrible, it is not the cause of Celiac Disease. Wheat, Rye and Barley gluten is. Any number of triggers can bring it to the forefront. You got the shots, so you are protected from a lethal case of Covid. Personally, I would rather not eat wheat than be dead of Covid. Canyon House Heritage Style Honey White is my favorite for a sandwich. Keep it in the freezer and defrost only the slices you need. About 15 minutes to defrost a slice on the counter or nuke it for 30 seconds if your Lithium is low and you are impatient. Toasted the texture reminds me of rye bread. -

In 1970 when the Biafra Relief Agency switched from buying rice to the modern wheat because of price, the babies started showing symptoms of Celiac Disease. In my opinion, at the time Norman Borlaug was honored with the Nobel Prize so the symptoms were blamed on protein deficiency (Kwashiorkor) instead of Celiac Disease (caused by wheat). -

Call it Devil's Advocate but why do you need medical confirmation of what you already know: you cannot eat wheat, barley or rye because it makes you sick. Consider taking vitamins to supply 100% of essential vitamins because you need more to heal. Look at your potassium, choline, and folate intakes, most Americans do not eat enough.

Dr Hyman is the head of the Cleveland Clinic's Funtional medicine and has several books. For the psycology effects, Dr Daniel Amen. The outlier here is actually the one good test in June. Lab error is possible. How are your other labs, BP, homocysteine, lipids. The minimum RDA for Choline is 550. That is the equivalent of 4 1/2 large eggs or 9 cups of cooked chopped broccoli. The safe upper RDA is 3500 mg, but the negative side effects of too much choline; fishy body odor, low blood pressure; are usually not seen until 7,000 mg (24 ounces of lean beef a day)

It is no one's business why I choose gluten free. I appreciate anyone who eats gluten free, with or without a medical license.
