  6. There is a newish designation: Non Celiac Gluten Sensitivity. Around 10% of western diet get it compared to 1% Celiac. To diagnose first exclude Celiac Disease. Then look for improvement on GFD.   23. Welcome to the forum, Soy is made from soy beans and gluten is found in wheat, rye and barley. Perhaps you are confused because Soy Sauce is fermented wheat and soy mixture. You can get fermented Soy only. It is called Tamari Sauce. The brand I use is Certified Gluten Free.
