I think you should really see a Neurologist. Not usual to have those symptoms when on a Gluten-free diet. You should be checked for MS, CIDP, and any neurological disease. I have CIDP, was in remission but caught Covid and it brought out my auto-immune disease. I am in a flare up now and can barely type my fingers hurt so bad from the tingling and pain...
