  1. it's a great recipe! smells great while it's baking and tastes awesome when it comes out of the oven!

    I may have to make it for dinner tonight! I was debating making tacos again or spagetti, but all this talk of oven fried chicken has my mouth watering!

    Out of curiosity what taco shells do you use? Tacos are sounding good! We can have corn flour in any form right?

  2. Thanks everyone! My nutritionist was terrible, I have no plans on returning to see her. My GI doc also leaves a little to be disired in the explanation department, he had is secretaryu call me and say my test were positive for Celiac, i had to ask for him to call me to explain. I am really hoping that I can get refered by my family doctor to a hospital about 1 1/2 hours away, they have a center for celiac research, so they should have some doc's that know what they are talking about! I actuaally just went to see my surgen for my post gallbladder chek up and we were talking about it, he told me the same thing the nutritionalist told me, not to stress eat stuff with gluten if you want, it's not going to harm you that much. which goes against everything I have read and what my GI doc said. Peolpe around here are clueless, and it drives me crazy!

  3. Thanks everyone, I have really been trying to watch what I eat, I have only been eating whole natural foods, using canola oil and salt and pepper for cooking. I was wondering though, I bought diet sprite which is flavored with splenda, is splenda safe? Are there any headach meds you know of off hand that are not gluten-free?

  4. I haven't seen any testings like yours, usually, I see antitTg antibodies done. I would ask your doc for clarification? Blood tests are not always accurate, and if you did have a positive biopsy, that is important. What were the findings from your biopsy? What is the response to the gluten-free diet?

    My doc does not have very good bed side manner and makes me feel as though Im a bother when i question things, he is a gastro specialist so I feel as though i should trust his opinion, but don't really understand the bloodwork results either. According to him the Pathalogist said that I may have celiac and to get my blood tested to confirm. As far as results from bieng gluten-free i was more of the person that didn't have all the GI issues so its hard to tell, and I have only been gluten-free since Thursday. I did make an appt to go see my family doctor so hopefully he can explain better and read my tests to me. Im also hoping that he would refer me to a celiac specialst to confirm everything.

  5. Hi! I live on the easternshore of Md, looking to see if there are any others out there. Also just saw about the "making tracks for celiacs" in Baltimore on 5/7/06, thats great , I am definatly going to try and be there. I had no idea UM had a center for celiac research, I have been looking for a doc. that specializes in celiac disease so I could get my primary doc to refer me. Does anyone have a suggestion?

  6. I have been Gluten -free since thursday (at least i think i have) I have not watched cross contamination as much at home as i probably should. I really don't feel any different, but I am guessing it may take a while. My problem is terrible headaches, I have had one everyday since going Gluten-free, is this common and what medicine is okay to take?

  7. After a nightmare of an appt witha nutritionalst I got to thinking about her saying that there are different degrees of having this disease, I wanted to know where I stood. I have always had MILD Gi issues nothing to the extent of whats discussed in here, I always chalked it up to poor diet or un diagnosed IBS. Anyway my Celiac was discovered by fluke, had and Endoscope to check for ulcer saw damage did biopsy came back that I could possibly have Celiac and to have bloodwork to confirm. I did that and was told there was no doubt i have Celiac and we went from there. I however went today to get copies of all my blood work and i am not understanding somethings or wondering if I truly do have it, so here it goes the test reads:

    *ENDOMYSIAL AB (IGA)------------------------POSITIVE (Negative)

    [a]

    ENDOMYSIAL AB TITER --------------------------1:40

    [a]

    GLIADIN AB IGG-------------------------------------------5 U/ml (<11)

    [a]

    Referance range:

    <11 U/ml negative

    11-17 U/ml equivocal

    >17 U/ml Positive

    Gliadin AB Iga------------------8 U/ml (<11)

    [a]

    Then it gives the same referance guide as above.

    The top one ENDOMYSIAL has a star that my doctor drew and then a note that says "needs dietary consult (gluten-free) "

    I know the top one says POSOTIVE next to it but it then has negative in (), and then the 2 GLIADIN tests are in the negative range, what does that mean??

    Please someone explain.

  9. So I need to vent, newly diagnoset via biopsy and bloodwork. I received a phone call from my GI doc's seccretary telling me I had this and they were setting me up to meet w/a nutrisionist in a week, no explanation onther than Celiac disease has something to do with wheat intolerance. I got off the phone very confused, I called back and asked the doc to contact me, he did and explained a little about it, told me to look it up on the internet and go over things with the nutrisionist she will be more help than he because all he can do is diagnose. Well in that week I researched the internet, got/read books, found you all (a lifesaver by the way) and was looking so forward to seeing the nutrisionalist. SHE WAS AWFUL!!!! We went in her office she gave me a booklet (6 pages) on a Gluten-free diet and then searched her computer to print out to more things that basically defined Celiac disease and it's symtoms. She asked what we have found out about it and told her we have been researching, she then said "okay, i don't know what i can tell you that you haven't already read" My husband asked her to proceed as if we knew nothing and all she did was go through the booklet with me regarding wheat and it's by products. After reading all these message boards I had some questions about cross contamination and how careful I should be. She told me don't worry about it , it's not a big deal the worst that will happen is I will get some cramping and D, but I would really have to get a significant amount of wheat through cross contamination for that to happen! she told me don't worry about products since i am not ingesting them and then said if you want a handful of pretzels every now and again eat them it's not as if you are allergic to shellfish or peanuts and your throught will swell and you could die the worst that will happen is GI issues! She was AWFUL!!!! When I read the booklet at home later #2 on the Must read section states watch for cross contamination even trace amounts can harm you!! I can baisically sum my experience up like this: Imagine going to your doctor for gallbladder issues(like I did) through bloodwork he finds you have Diabeties, his secretary calls you to give you the news, when you finally get to talk to the Doc about it he tells you yes you have it but go see a nutritionalist they can explain things to you better than I. You go to the nutritionalst and she tells you you have diabetes don't eat sugary foods! That sums up how i felt through this whole process. if it weren't for you all and these message boards I would go crazy!!

    Anyway thanks fo letting me vent! Im off to work now!!!!

  10. I just found out I have the same problem. I just read my shampoo bottle and it has wheat in it. I dont know what to do. I really cant use the stuff you buy in supermarkets.. makes my hair fall out. The stuff I use now is 30.00 a bottle. I have the shampoo and conditioner. If anyone has any suggestions I would love to know. Oh and the brand of shampoo I use is Frederic Fekkai, so if anyone is using it... check your ingredients.

    I'm with you, going through my shampoo changes now. I love Pureology products, some do have wheat you will just have to read the ingredients but the products are great. That's what I am switching to.it is about $17.00 a bottle but it's good stuff!

  11. Help! I am reading these message boards about salon products and cosmetics, do I really have to worry about all that as well. I understand lipstick because of licking your lips but hair color/products and make-up is that an issue to? Also what the dentist uses is that a problem, I have veneers on should I be worried about those? I manage a Salon and activly work as a nail tech do I have to worry about my job?

  12. How many out there have had a positive biopsy where your dr. said that they saw intestinal damage during the endoscopy? How many was the damage unnoticed during the procedure, but came back positive? I'm wondering if it actually can be seen with the naked eye?

    My doctor did a endoscope looking for something else and saw that there was some mild damage, he did a biopsy and the results came back that I more than likley have celiac sprue but to follow up with a bloodtest, that just came back positive.

    Thanks any help I can get would be nice, this is a shock for me. I had gallbladder issues but they did an endoscope to make sure of no ulcers but found damage in the the small intestine, did a biopsy and was told i may have celiac and to get a blood test to confirm. They called today and said without a doubt i have Celiac disease. I have always had digestive issues but thought it was from my poor eating habits, so now I am recovering from having Gallbladder surgery and i get this news, a little shocking!

    I was just diagnosed with ciliac disease and don't know where to begin! I have been reading up on the topic and have an appt with a dietician next week but I am still in shock. anyone to talk to would be nice!
