  1. i like to make rice pudding... there are lots of different recipes available if you just google it. some have eggs and some don't, others you have to cook them in the oven for like 2 hours and stir them a lot (it's worth it) but others you don't have to. anyway, if you like oatmeal it has a similar texture.

    the recipe i use is:

    old fashioned creamy rice pudding

    1 qt. scalded (brought to the verge of boiling in saucepan) milk

    4 oz. long grain white rice

    1/4 C. sugar

    1/2 tsp vanilla

    Preheat oven to 300F. in a 1 1/2 quart baking dish, combine all ingredients. bake for 2 1/2 hours, stirring every 20 minutes.

    it's delicious topped with raisins and cinnamon. i like it for breakfast or a dessert.

  2. i know what you mean...i just had to by a bday present for my actual younger sister who was turning 17... if you know her taste a little bit, i'd go with jewelry. what's your price range? i'm pretty poor, but i was able to get my sister this really pretty/unique cross pendant thing that she can put on a necklace she already has so it wasn't too expensive. ??? just an idea. i think if you get something unique and that plays into their interests it will be fairly successful :) good luck!

  3. i'm going to have to go with potatoes also... great everyway. i love tates and i grew up on them anyway because no one knew how to feed a vegetarian kid! yum!

    on a side note (sorry!): mtndog-- would you mind sharing your recipe for chicken rice soup? would it be ok to leave the chicken out?? i used to make a really good one before going gluten-free (& just left the chick out) but it is made with cream soup and also rice packet that has gluten in the seasoning... thanks! :)

    i'm sure that the topic of what alcohol is gluten free has been covered before, but i'm looking for a few more specifications, so if you could help me out that would be great!

    ok so here are my limitations:

    1) obviously, gluten free

    2) caffeine free

    3) low calorie

    4) cheap (not many ingredients/not way expensive ones)

    5) taste -- i'm not a big drinker, i don't really like the taste of alcohol... so something slightly fruity/carbonated to mask the taste of alcohol??

    also, like i said, i rarely drink...maybe like 4 drinks in my whole life (i'm like the only college student on the planet who has never been drunk haha). i don't want to get totally wasted, but don't really know much is ok for a person of my size (5'7''/114lbs) and tolerance (zero lol)? any advice?? i heard that sometimes liquor can get to you without realizing at first and i don't want that to happen... thanks so much in advance for the help!! you guys are awesome :D

  5. i hate the cold too... i literally DREAD winter... i live in iowa too(i think someone else in this post also does) and there are some days when i skip class altogether just because i don't want to walk across campus and freeze. the school i go to also "boasts" the fact that we are allegedly the 2nd windiest campus in the nation...so it's VERY cold. i wear lots of layers and keep those handwarmers in my mittens but i just can't stay warm. and once i get cold, i can't get warmed up again. i am always cold tho, i don't even use an AC in the summer unless it's over like 90 degrees and VERY humid.

    i guess that wasn't much help...sorry! but i do recommend the hand warmers if you're going outside...every little bit helps i guess. i usually get them at a sporting goods type store. you just pop them out of the plastic and they heat up and stay hot for quite a few hours. if anyones has any more advice about this, keep posting...i'd love to hear!

  6. i guess i've never really had a problem with this either. if i go to socialize that's what's important to me. i've never really felt embarrassed or pressure to eat. also i was a bit of a health nut even before going gluten-free so most people that know me, know that i eat lots of fruits and veggies and not much "junk foods". so i guess what i'm trying to say is, try eating natural foods that are good for you (not only because they are good for you) but also because they are gluten-free and "normal". i'm always munching on raisins... i keep one of those little boxes stuffed everywhere. or an apple, banana, orange. those are all easy to throw in your bag/purse. baby carrots are easy to bring along too. if you're looking for more junk food/convenience foods check out the recipe topic forum...there's tons of good stuff in there. good luck!

    i'm not trying to slam chiro's or anything but i just think they creep me out. i've been twice (i was in a car accident and had pretty bad whiplash and dramatically reduced range of motion in my neck) and they didn't help me at all. the cracking just freaks me out a little too much for my comfort. also, my mom's friend is a nurse and she said that a physical therapist is a better option...she has seen a couple people go thru her office with strokes from going to a chiro. which scares me. she said one was a young woman and that just hit to close to home for me. if it works for you, thats great, but just be careful!!

    i'm not a confrontational person either and i will be moving out of the dorms next year...so i was thinking about how i'd handle this situation & decided that i think i would go the route of NOTES. i think you said that you have already discussed it a little so they have heard straight from you what your issue is. if it were me, my next step would be: post a nice, neat, typed, maybe colorful :) note on the fridge or wherever warning/reminding people (nicely/polietly) not to use your things. also definatly label everything. and maybe keep what you can in your own room if possible. one of my friends lives with roommates and she keeps some of her things in her room anyway just cuz she doesn't want anyone else to use them...??

    i am a college student right now and became gluten free about a year ago. my first piece of advice is that your daughter HAS to learn the safe & forbidden ingredients for herself. (there are tons of lists available on this site even i think). it's just not practical for her to have to call you every time and i think it would be much safer/easier for her in the long run if she became her own reference guide (not that having a mom with one too isn't helpful!)

    also, definatly talk to the dietary/kitchen staff. i met with mine going in thinking i was going to have to explain everything and it turns out there are 2 other gluten-free students here (not that big of a school either!) so they already had an idea and some foods they knew how to prepare and everything. i'm not saying that it was a breeze, i have to contact them about once or twice a week to get things straight...but it's worth it and she deserves it...especially since we're paying for it!! so i definatly agree with whoever said "squeaky wheel gets the grease."

    and even suggest that your daugher join this group. it has been really helpful for me. sometimes i don't know what i'd do without these guys!! everyone is very helpful and always quick with responses and info.

    i hope youre daughter gets along alright at school. i know it can be pretty tough, but she'll make it! you sound like a very caring mom! good luck with everything!!! kms

  10. thats so exciting! :) the other day i was working out and was flipping thru the sept. issue of women's health magazine. there was an article about things that go undiagnosed too and there was a little paragraph about celiac. i about fell off the elliptical :D haha

    i'm so glad that is seems like there is becoming more awareness...but maybe it's just that i'm more observant of it now...? :blink:

    i was just wondering what other people get when they are glutened?? for me, it seems D for like the first day and then C for like the next 3-4 days.... is this weird?? i just wanted to compare symptoms and any remedies you guys do to make it any less uncomfortable (if that is even possible...lol).

    1) Papa John's pizza

    2) Cinnabon cinnamon roll

    3) cheese balls

    4) my mom's buttermilk best ever brownies

    and just deal with it......but then i think about when i get accidentally glutened on something minor and i can't imagine how i would feel after that.....so i just move on. but i'm still sad when i smell those things :(

  13. i know exactly what you mean! i'm so mad at myself (and sick) right now because i did the same thing...i grabbed a little sleeve of trail mix with nuts, rainsin, and generic m & m's --thinking what could be wrong with that? AFTER i finished the bag i lazily read the ingredients...wheat...my heart sunk cause i knew what was coming... now i'm trying to drag my sick, miserable self around campus mad for not being more diligent....grrr this is so frustrating sometimes....

  14. i made this cheesecake a while ago and it was soooo good. i'm making it this weekend when i go home and realized i don't think i ever posted it on here. so if you like cheesecake, this is delish and it's a "lighter" version i guess. doesn't taste like it tho!!

    Blueberry Cheesecake

    1 1/2 C. ground almonds (i used a mixture of ground almonds & pecans (very tasty!) that i just ground in a blender/food processor)

    1/4 C. lite margarine

    3 Tbsp. sugar

    Crust: Combine above ingredients. Press firmly into pan and bake for 10 minutes @ 375. Let cool.

    16 oz. fat free cream cheese, SOFTENED

    1/2 C sugar

    1/2 tsp vanilla

    2 whole egg whites

    2/3 C blueberry pie filling

    Filling: Combine cream cheese, sugar, vanilla & egg whites. Spread over crust. Spoon filling on top; cut through both layers to create the swirl effect. Bake 40 minutes in preheated 375 oven. Serve with remaining pie filling.

    Nutrition Analysis (per serving)

    180 calories

    7g protiein

    3g fat

    This was excellent--just be sure that you spray the pan cause i had trouble with that last time. it calls for a 9'' pie plate, but there wasn't enough room so i think i'm jsut going to use a normal cheesecake (springform) pan this time.
