hey!
thanks for all the suggestions everybody! i tried the gorilla munch...very tasty! panada puffs were pretty good also. i tried one (i can't remember the name because i threw it directly in the garbage!) that wasn't very good, but i bought it because it was a healthier one and higher in fiber and stuff. any ideas for one like this?? is quinoa or whatever like that?? i'm still looking for a kashi go-lean type replacement

i'm having my wisdom teeth out in a few days and am wondering if i will be able to eat jello/pudding during the recovery. i just want to be sure that they are gluten free because i don't really know what it's made of.

i used to live on cereal before going gluten free. so far i haven't had much luck with gluten-free ones that taste very good! i was just wondering if anyone had any suggestions?? i liked anything from cap n crunch to kashi cereals....so any advice would be great!

p.s. malt flavoring sucks!!! i hate when i'm reading down the list of ingredients, getting excited...then you hit it: malt flavoring. it ruins all the cereals!

hey!
i have been a vegetarian my whole life and have been gluten free for the past 3 months or so. it seems tough at first. (great:))people on here recommended rice noodles and that helped me a lot because you can use them in tons of pasta dishes. i also love stir fries and do lots of experimenting. its fun to try new things out, as long as you are ok if it turns out to be a flop!

hi everyone!!
i just tried this banana bread recipe & think it is the best (and easy) gluten-free banana bread ever. it's really good-- not just "good for being gluten-free" either. just wanted to share it!
BANANA BREAD:
1 stick margarine or butter, softened
3 large bananas, very ripe
2 cups rice flour
1 cup sugar
1 cup pecans, finely chopped
2 eggs
2 tsp gluten-free baking powder
1 tsp gluten-free vanilla
In large bowl, cream butter & sugar. Beat in eggs, vanilla, and bananas. In separate bowl, stir & mix flour and baking powder. Combine this with the banana mixture until all dry ingredients are moist. Stir in pecans. Turn batter into 5 x 9 loaf pan. Bake @ 325 degrees for 1 hour and 20 minutes.
**MY NOTES**
Mine did NOT take that long to cook (but it could be my wierd oven...) so keep an eye on it!
Also, i didn't use pecans and it came out fine; so i'd say they're optional.

when researching/reading about celiac, i have often read that you "have it" your whole life but certain things (like chronic stress) can trigger enough symptoms to cause alarm. i recently "offically" have it and now looking back it makes sense. i've always had stomach & headaches, low weight, GI problems, all those weird things. then i started my freshman year of college, my parents announced they were splitting (out of nowhere after 25 years), i was lost in school, trying to be there for my family... just spread too thin--i think all that stress combined made my serious symptoms really appear. in a way i am glad, because now after following a gluten free diet, i feel better than i ever have.

i'll try to check out some health food stores around here. that's a good idea (finding them out here on the prairie might be a challenge tho!:)hahaha)
and i'll have to rally my parents or something to talk to the dining center people...they are just stupid because they charge you extra if they have to make special food for you (already poor college students...hello?!)

i'm new to celiac and am pretty overwhelmed! im in my first year of college and i'm struggling with the dining centers (they are not very understanding). right now i'm surviving on fruits, veggies & corn tortillas.... (i'm also a lifelong vegetarian) so i'm seriously craving a real meal!! and people around me have never heard of this and i'm embarrased to say anything cuz i get that look like i'm totally making this up or something...
any help you can give me about any of these things would be great!!!!

sorry i don't have a recipe, but a suggestion... corn tortillas are softer and roll MUCH easier if you pop them in the microwaves for like 20 seconds first.
about the recipe, i came across one a while ago but don't remember what/where it was. i think i just got it from typing it into google tho. so you might want to try that!
