    Perhaps you have answers by now, but if not...SIBO can also cause flattened mucosa. I also had flattened mucosa on an endoscopy two years ago. The GI did additional tests for Celiac Disease and all came back negative. From there, they had no answers for me and no interest to keep investigating. It wasn't until I saw a Naturopath that I got the SIBO diagnosis...
