  1. I recently purchased the paesano pizza oven. I have not tried to make gluten-free Pizza in there yet but was hoping others may have tried. Thanks
  2. I did eat out about a week before my testing (all dedicated kitchen). I just find it discouraging since it took me 5 years to drop my numbers way down to normal range to find out that I have "Partially developed sprue". I guess bloodwork is not a guarantee that you are safe.
  3. After 5 years on a Gluten Free Diet my bloodwork is finally normal. I am a 65 year old male and maybe my age had something to do with the long recovery. However, I had a colposcopy and endoscopy last week and they took biopsies of my villi. The results show "Partially developed sprue". I am puzzled. Does this mean that I am not really healed and...
  4. Good Morning, I decided to start enjoying some drinks that I have been staying from - like red wine. I have been gluten-free for 5 years now and feel great and my blood work is finally normal. This last week I started having a glass of red wine. I love it. No reaction. I was wondering if anyone has any opinion on drinking wine. I saw some old post but...
  5. My wife and I will be traveling to the Grand Canyon this September from Michigan. Yes, I know that gas prices are going to be costly. I searched this forum for suggestions on where to stay and eat but lot of the information is outdated. I hope I can get some current tips on where to eat and stay during these crazy times. My wife and I want to stay visit...
  6. Yes, I did increased my fiber intake and maybe that was the issue. Now I am avoiding any fiber and I feel better but I guess I better watch it so I don't get the reverse effect of lack of fiber...if you know what I mean. We really need to have a balance diet and not overload on fiber. I eat nuts every morning with lots of fruit. I am slowing bringing back...
  7. Thanks Scott. I should of been more clear on the hamburger and fries. The buns I baked myself and the fries I baked potatoes in the oven. The beef was grass fed beef from Aldi's (great deal). I never eat out. It has been two days and I feel much better on a bland diet. Now I do not know if it was something I ate or something like a stomach flu. We shall see...
  8. I have stopped taking my statin but that did not help. I am now doing an elimination diet and I think I might know but not sure. I make my own granola (all nuts from nuts.com gluten-free except pecans from Fisher) with almonds, pumpkin seeds, walnuts, pecans (Fisher Pecan - this is new) and coconut flakes with maple syrup for sweetener. I have been eating...
  9. It has been 12 days now and I have been experiencing abdominal cramps with D. This has never happened to me. I have been gluten-free for almost 2.5 years and was an asymptomatic Celiac. I do not know what to do. I have eliminated many foods and last night I thought I was getting a little better so I had a burger and fries. This morning out of the blue...
  10. I just realized that I have been sprinkling chia seeds on my granola and toast every morning. Could this be the issue?
  11. I have been sprinkling a little chia seeds (from costco) on my toast and granola the last week or so. I have noticed that it does improve constipation but I am experiencing stomach discomfort throughout the day. Is this possibly due to the chia seeds? Should I soak them or maybe I just cannot tolerate the fiber? I am only consuming no more than a 1/4 tsp...
  12. I have been gluten-free for almost 2.5 years and have hardly ever experienced any abdominal pain from cross contamination or intestinal flu. However, for 5 days now, I have experience intermittent abdominal pain with occasional trips to the bathroom. I have tried to eliminate certain foods which did not help. I am at my wits end. I feel perfectly fine with...
  13. I am experiencing a very similar situation with my bloodwork. Two years ago my Tissue Transglutaminase IgA was 193. After two years it went down to 55. I was very disappointed since I never go out to eat and I prepare my own food. My wife is not gluten-free so there is a chance of some cross contamination. I feel your frustration. I agree with cyclinglady...
  14. We are thinking about making Boneless Turkey Breast for Thanksgiving this year. Any suggestions of safe gluten-free turkey breast. I know I have seen some of the popular brands (Butterball) state gluten-free but I thought I would hear from folks who have personally tried some brands.
  15. Scott - I never eat out. I make my own food. That is what concerns me. However, I think cyclinglady is onto something. I have been on GFD for two years and I feel good. My numbers are improving but not perfect - I think I can live with that. My Doctor said you cannot chase these numbers because you will go nuts. I think I am going to cool it with the blood...
  16. It has been two years since I have been on a GFD. I prepare my own food but my latest blood work shows some lowering of numbers while others are slightly above normal. I am 62 year old male and wonder if I am doing something wrong with my diet. How long should it take to get my numbers back to normal. I have never felt better. Should I be concerned...
  17. I was diagnosed almost two years ago. I am a 62 year old male. I never really had symptoms but experienced low ferritin levels for years. Once I was tested and scoped it was clear why I had low levels. I went on a gluten-free diet after I was told I had celiac and after a year my ferritin levels went from 11 to 51. It can be a challenge for us to go on the...
  18. Thank you for your response, I really appreciate it. I decided to give flaxseeds another go. I am starting with a low dose and so far so good. I really think the health benefits of chia and flax seeds are worth the try. Also, psyllium husk is next on my list of things to add to my baked good. Good information. Thanks
  19. The last few weeks I have been adding flax seed meal to my granola (1 tsp) and salads (1 tsp) every day for health and to help with my constipation. It seemed to help a little but has started to happen is that I developed some form of discomfort around my sternum area. I thought it might be some form of heart burn or inflammation (like costochondritis...
  20. I discovered Costco had a new product that I was excited about. It is Crown Maple Bourbon Barrel Aged Organic Maple Syrup. I really want to try it on my pancakes waffles. However, I was wondering about how safe it is for us Celiacs since it is aged in oak barrels with bourbon. I emailed them and this is their response: "The Crown Maple Bourbon Barrel...
  21. I also have experienced the same thing. My cholesterol soared after diagnosis with celiac disease (1 year on GFD). The Doctor wanted to put me on some medication to lower it but I insisted that I wanted to try to control it by diet. After a month or so I reduced my carb intake and red meat and my cholesterol dropped by 50 points. My LDL is still not good...
  22. I came across a site that offers Gluten Free Spices with free shipping. Has anyone ordered spices from My Spice Sage? I reached out to them to see if they are gluten-free Certified. I have not heard back yet. https://www.myspicesage.com/spices-seasonings-herbs.html?facets=special_diets%3A146 Thanks
  23. It has been a little over a year for me. I am finally getting comfortable with the diet and feel pretty good. I am not grain free though (I make bread and pasta from ancient grains like buckwheat, sorghum and brown rice and others). My numbers and biopsies are still not normal but it has improved considerably. My Iron and Ferritin levels are now normal -...
  24. I wanted to ask what you all think on issues of cross contamination regarding garbanzo beans. I like to make flour from dry beans. Do you see any issues with dry beans? I rinse and soak them for several days before milling them. Just wondering. The ingredients are just beans and sometimes organic. The package is not labeled gluten-free.
  25. My GI told me the same. When he looked at it he said the villi looked healed after one year on a GFD. I found that odd since my blood work still indicated some antibodies were still present - improved but still not normal. However, the biopsy showed mild to moderate villous blunting. Results indicate that it was healing but will take time. Lot depends where...
