  6. I went in for my yearly physical yesterday. I have been on a GFD for almost a year now since being diagnosed with Celiac and thought I was doing pretty well. My blood work including my Ferritin (which was 17 ng/ml a year ago) increased to 62 ng/ml which made me very happy. Also my liver enzymes improved which is a good sign that my GFD is working.   8. Yes - the iron is dedicated gluten-free just for me. All the other ingredients are totally gluten-free. When I made the waffles without the Buckwheat I had no issues. Good idea on making a porridge. Thanks Ennis_TX.
  9. The other day I decided to experiment with my waffle recipe. I love my gluten-free waffles with Maple syrup and blueberries. My recipe contains these flours: Rice Flour, Brown Rice and Tapioca Flour - and Corn Starch. I tried to cut back on the Rice Flour with Buckwheat Flour (I mill my own).   24. Thank you cyclinglady. My one concern is that the iron levels have been on a down load trend. My hemoglobin has been pretty consistent over 5 years - around 13.5 the RBC also looks around same over the past 5 years - around 4.5. Iron seems to range from 56 - 78 in the past 5 years.
