  1. I am really puzzled. I just had blood work done to see how I have been progressing my diet. I requested it because I just haven't been feeling all that great. I was shocked to see that my iron levels dropped to 56 mcg/dl from 73 mcg/dl four months ago. I thought my diet would improve the health of my intestines and absorb iron. I have not yet received my...
  2. I want to thank everyone for responding. I am doing much much better. I have taken the advice from Cyclinglady. I am follow the FODMAP diet and it works great! I have eliminated, grapefruit, avocado, apples, almond meal flour and various spices like garlic and onion powder. I have not experienced any issues for almost a week now. I feel less full and...
  3. Thank you all for your suggestions. I do not use oats in my granola. It is mainly all nuts and seeds. However, in the last three days I have eliminated some foods listed by the FODMAP diet like avocado and grapefruit. It has really made a difference. So far it seems to have helped. We shall see vic
  4. Interesting. Maybe I will give it a try. I eat blueberries, strawberries, kiwi and half a grapefruit every morning with my granola. Is that a bit excessive? I think I will consider a FODMAP diet and see what happens. Thank you so much cyclinglady.
  5. I am really frustrated trying to figure out what is causing my stomach to gurgle late in the middle of the night when I am sleeping. It is so bad it wakes me up from a sound sleep. I then have a very hard time getting back to sleep. I was diagnosed with celiac disease 6 months ago and have been very diligent with my GFD. I was asymptotic but I was wondering...
  6. Thank you so much for your reply. In my granola I do not use any oats. It is mainly made up of almonds, pecans, coconut flakes, flax meal, walnuts, pumpkin seeds and puffed rice (gluten-free). I buy all my nuts from nuts.com gluten-free. I hope it is all safe. I try to avoid any processed products but I do on occasion eat some gluten-free rice cereal...
  7. I too have experienced low ferritin for the last 5 years. When I was diagnosed with celiac disease my ferritin level was 17 but a few years earlier it hit a low of 10. Doctors shrugged it off even after retesting 2 times with the same results. The Doc would ask me "are you experiencing any bleeding anywhere?" I switched Doctors and now I am on a GFD. After...
  8. Hi healthysquirrel, I did not take any supplements. I assume because like you said my villi is healing allowing for absorption. I was a little perplexed why my ferritin improved but my anti tissue did not improve as much as I thought. I guess it's on its way. That is a good idea on the food - I need to take time out and prepare some foods and have it...
  9. Thank you RMJ. Glad you are doing well also. This Celiac journey is a real challenge. There are days when it seems too much to handle. I appreciate the support - I am a rookie at this..lol
  10. lol thank you so much cyclinglady (love that name) - I really miss my coffee. Thank you so much.
  11. I try to avoid as much processed foods as I can. But I have to admit I do eat some Gluten Free processed foods like: Gluten Free Rice Cereal (ingredients look okay - rice, can sugar), cranberry juice, Costco Gluten Free Cashew Clusters, Frito's, Breyers Vanilla Ice Cream, home made bread (tapioca flour, corn starch and brown rice flour), homemade jam and...
  12. Well I got my results today and I really thought I would see better numbers. My ferritin improved from 17 to 46 and Gliadin IgG Antibody dropped from 113 to 48 and my Gliaddin IgA dropped from 102 to 38. However, my Tissue Transglutaminase IgA was 193 then two months later it dropped to 154 and then two months after that it only went down to 150. I really...
  13. Has anyone had any issues with gluten-free Hudsonville ice cream? I bought some this weekend and it was great. However, I experienced bloating, cramping and belching. I do not know if it was the white rice I ate earlier or the ice cream. Just wondering if anyone else had issues with the ice cream. It has a lot of ingredients which makes me a little nervous...
  14. I wonder if someone can clarify something for me. I have several gluten-free Phone apps that I use to scan food for Gluten. I scanned PayDay and Heath Bar and (bits) and they both come up with "May contain Gluten". However they are labeled "Gluten Free" and are listed on many sites as Gluten Free. Any suggestions here?
  15. Well last week I went in for blood work to see how my ferritin and iGa levels were progressing. I have been on a GFD going on 2 months now. I was happy to see that there was a slight increase in my ferritin. It was 17 in June and today it is now 26! It is still low but at least it appears my diet is working a little and my ferritin levels improving. I assume...
  16. Thank you all. I do not eat out and I prepare my own food (with the help from my wife...lol). I still feel I am doing something wrong but don't have any GI issues and I feel good. I guess my confidence is not so high because I don't feel cheated on what I eat. I do not eat processed foods and make most foods from scratch. I guess my concern is CC, spices...
  17. I use Sanders Milk Chocolate Hot Fudge or Classic Caramel - All Gluten Free! Love it. https://www.sanderscandy.com/dessert-toppings.html. " It is outstanding. "Sanders 7 Gourmet Dessert Toppings have recently been certified Gluten Free. All seven topping flavors were independently tested by Neo Gen Laboratories for Gluten"
  18. Is it possibly to have improved iGa numbers after being on GFD for 6 weeks but still have blunted villi? I am asking because I had an endoscopy for my esophagus two weeks ago and the Doc said he could see issues with my small intestines and active celiac disease. I was disappointed since I was on a GFD for a month. Next week I am going in for blood work to...
  19. Has anyone ordered from anuts.com? I emailed them and they said their almonds, pecans, walnuts and other nuts are gluten free - especially if they are raw or shelled. "All nuts are gluten free. Especially when there is no coating of any type on them. Simply roasted or salted are gluten free as well." Their prices are very reasonable. Just wondering how they...
  20. Thank you again cyclinglady. I am in Michigan. I will take your advice. Breyers it is (with Sanders gluten-free hot fudge..yum). Thank you for taking time to respond. I appreciate it.
  21. Thank you that is very helpful. I too have Kirkland cashews but it says that it is "processed on equipment that also packages products that may contain tree nuts, milk, soy and wheat". I suppose that is no-no. Also, you brought up ice cream - Edy's Vanilla ice cream considered gluten free?
  22. Thank you all. I wish I would have researched this better. I just spent money and time to make a new batch. I guess I need to order from nuts.com and get some gluten-free walnuts and almonds. Very dissappointing. I had a few ingredients correct like organic Maple syrup and organic coconut and flax seed. Man I spent 4 weeks on this diet and made no progress...
  23. I have been on a GFD for 6 weeks now and I have been making granola cereal with walnuts, pecans, almonds and other nuts from Costco. I never thought to read the label but it indicates that they share equipment in processing that may contain items like wheat. I am asymptomatic and cannot tell if I am getting contaminated. Should I be worried? I did test with...
