Hi everyone!
Can someone with Bette Hagmans Gluten Free Gourmet Cookbook help me out? I returned my copy to the library without writing down the cream puff recipe. All I need to know are the ingredients and amounts. I've got the process down pat! :-) Thanks a lot!

Well i finally tried it and it turned out GREAT! I soaked the rice papers until soft and rolled our egg roll mixture up carefully. Then I let them sit a couple minutes and then rolled them in sweet rice flour. Then, to make them crispy like a regular egg roll I put a light coating of tempura batter on the outside (recipe from Donna Washburn's 125 Best Gluten Free Recipe book). They ended up tasting almost exactly like regular egg rolls, maybe just a tad bit greasier. I fried them at a high temp, around 350 just until golden. Good luck to anyone else who tries it!

Hi all!
Donna Washburn's cookbook, 125 Gluten Free recipes has a GREAT tempura recipe. I used it to make onion rings, shrimp, and to put a crunchy coating on my gluten free egg rolls. Everything turned out delicious! The best part was that I didn't have to buy the book...it was available at our local library! It also has a recipe in it for sweet and sour sauce, which i haven't tried but it sounds pretty good. This book is definitely worth checking out..i've even seen it on E-bay for pretty cheap.

Just an FYI for all the juice fans out there... I contacted Bolthouse about their line of juice products and they said that ALL of their juices are gluten-free. They have some people with gluten sensitivity working for them, so they were conscious about celiac disease when formulating their products. I personally recommend Perfectly Protein. Its flavored like Chai tea..which, if you ask me, tastes exactly like those windmill cookies you used to eat when you were a kid! In fact...I might run out and get one right now!

p.s. - Perfectly Protein helped me alot when I was trying to gain weight just after my diagnosis. I know some of you are looking for a way to get back to a healthy weight after your system begins to heal. Hope this helps!

Wow! That was a dramatic title, but it got my attention so hey, it worked! The strain celiac disease can put on you and your family can be so overwhelming, even before you are diagnosed. I don't know your situation, but I do know that many of us have had to overcome huge relationship struggles because of the celiac disease. Believe me, you are not alone. Feel free to vent when you need to and ask as many questions as you want.
To answer a couple of the ones you posted:
Brown and white rice are both safe for celiacs as long as you are buying pure rice. None of those rice mixes like Zatarains or Side Dish packets are allowed.
Some online research I have done has said that taking glutamine-L as a supplement can help restore intestinal damage. Despite sounding like the word gluten, I checked a bottle at the health store and it is gluten free. Please talk to your gastro doc. before starting this because, as many have said, I'm not a doctor but I play one online!

Ok, so I found these vietnamese rice wrappers and I'm thinking it would be great to try to make eggrolls with them. The problem is that when I try to find out how to use them on, say google, I only find instructions for eating them unfried. Has anyone tried frying those suckers before, and if so, how did you do it and how did it turn out?

I haven't found any place that makes a cinnamon roll like we used to enjoy. The closest ones I found were from Celiac Specialties; most of their stuff is delicious, but the cinnamon rolls were disappointing.
I have the BIGGEST cinnamon roll cravings in the world...if i were to cheat it would definitely be with a fat roll of Grands Cinnamon Rolls. But, since I am trying to be stronger than that... I found that if I make the Cinnamon Chebe bread it takes away the craving. I'm not saying they taste anywhere near as good as the real thing, but somehow they kept me from running to see the pillsbury doughboy (and the hospital!). You can make a simple butter-and-cream-cheese frosting to dunk them in. I think a bag is about 3 bucks at the health food store. If you find another delicious alternative let me know...I'm craving them as bad as you!

This Christmas we used gluten-free graham cracker crumbs from Celiac Specialties in our chocolate covered peanut butter balls - also very similar to a reese's cup. Delicious! Not cheap, but perhaps worth it if you place a bigger order to minimize the expense of shipping.

Ok, so today I go to my required lecture for class; and what do I walk in to? The professor has bought pizza for the entire class. Not just any crappy pizza, but Pizza Hut deep dish, extra cheese, ham sausage and pepperoni incredible smelling pizza. And I have to stay, I cant walk out because he's going to test us over the movie we're watching in class today. So I have to sit there for an hour and a half... and watch the girl next to me scarf down 3 slices of the stuff. Why do they torture us so bad? I was ready to gnaw my own arm off. I hate it when stuff like that happens, granted; our professor thought he was being nice to the class but why does that include me being tortured? AAAAHHHHHH
Sorry for the ranting, but I really want to scream my head off right now!

FYI - I had the fish sticks last night, and they're really good. Pretty expensive, 5.25 for a box of 8 but very tasty when you're craving something like that every once in a while. If you're missing fish sticks or chx nuggets try them out!

Thanks everyone for your responses. I am actually VERY suspicious about eating there already, but that thanks for your words of caution. I only asked because I specifically remember reading someone's posting about "eating at Olive Garden all the time" but I'm not sure who the member was. If anyone knows who I'm talking about, let me know.

This topic came up at our Celiac support meeting this month and someone mentioned that Members Mark asprin (sams club brand) is gluten free. She said she called the company and they were certain they were gluten-free. You should probably make this phone call for yourself, but this may be an option.

GEF I totally love the bionaturae pasta, especially their macaroni noodles. I have to restrain myself from making a fast tuna-pasta salad every day for lunch with it! I just bought 3 different brands though last time i went pasta shopping so i could compare the taste - tink., glutino, and the bionaturae spaghetti... I'll let you know the results of my experiment!

If you need to buy a premade bread I agree with celiac3270 about the Kinnikinnick brand. I used to buy their honey-rice bread and I was pretty happy with it. They also have other combinations if the honey-rice is too sweet for your taste. If, by chance, you have 1 hour out of your week to make yourself a loaf of Gluten-Free Pantry's favorite sandwich bread I think it would be worth your while. I eat this bread and I love it...even took some to Steak N Shake and had them make me a Frisco melt with it....DELICIOUS! Honestly, it doesn't even need to be toasted though to taste pretty good. I hate that dense bread feeling too, so I slice it thin using an electric knife (you know, the one you carve the turkey with) lol. gluten-free Pantry's bread was the last brand I've tried because I had no reason to look for anything better. And as a bonus there's a recipe on the back to make it into Cinnamon Raisin bread which is great too!

My grandma is absolutely insistent on taking me to the new Olive Garden in our area and I was wondering what (if anything) you all order when you go. Are any of the soups gluten-free? I know I obviously cant do the pasta and breadsticks, but I've never been there so I don't know if they offer anything else I could try. Thanks for your help!

In my Living Without magazine this month I saw something maybe too good to be true.... gluten-free chicken nuggets and fish sticks?!?! I guess Ian's started making a few Allergen free products and are selling them across the country. My question is: has anyone had them, where did you buy them, and were they worth it??

Well I'm sure everyone has their own opinions on the Gluten-free bread thing but .. I hated every bread I tried until I got ahold of the gluten free pantry's favorite sandwich bread. If you haven't tried that one, you don't have the full picture of how good gluten-free bread is. I was reluctant at first (oh great, another $6 bread I can bake, try, and throw in the trash) but it turned out to be something I could really live with, even enjoy ( when you toast it or eat it still warm from baking with a little garlic butter...mmmm!). Whats even better is that the Meijer stores in our area have begun carrying it and its at least a dollar cheaper there than at the health food store. $4.99 I think. Just a suggestion, I bake a loaf one a week to meet my sandwich needs and it works out great!

I'm so sorry I didn't check this post earlier... I just went through the same thing..unfortunately over christmas. With me, I had the pancreatis pain for a couple days before I went to the emergency room, when i went they said my amylase and lactase (sp?) were really elevated, one was around 1000 I think..obscenely high! They admitted me and sent me home the next day saying i needed to have an ultrasound soon to see if i had a stone. Well...christmas eve my dad makes really delicious gluten-free coconut shrimp (deep fried) and I end up back at the emergency room (They wanted to admit me...i said no way!) Anyway a few days later i had the ultrasound and everything came back normal so they told me to go back to my GI doctor that had diagnosed me with the Celiac disease. I went and he said that sometimes a small stone can get wedged in the pancreatic duct and sometimes they cant see that with the ultrasound so he scheduled an ERCP (something like endoscopic retrograde cholangio pancreatography ... whew). Basically they go down into your upper gi tract and put a camera in to physically view the structure of your gall bladder and duct. In my test he said that while i didn't have a stone, it was likely i HAD one and passed it because my duct was irregular shaped and showed some scarring from when the stone was there. He also checked to see if secretions from my gall duct had gone murky, that can cause you problems too. Possibly ongoing problems like you're having. Sorry this was so long but I'm kinda long winded sometimes. Basically, the ER docs you saw were pretty ignorant and I recommend going to a GI doc so they can check you out right away. If they do need to take your gall bladder I've been told its kinda a blessing because A) you dont really need it and
you'll never have pancreatitis again!

First off I think its awesome that you're stepping up for her like this. It helps so much when you get diagnosed with this disease to have people around you who want to help with the transition. My mom was that person for me - a lady at our health food store had her buy me the book "Against the Grain" by Jax Lowell. Its an older book, probably published around '94, but Jax has an awesome way of snapping someone out of their depression about celiac disease and making them proactive. I don't know if this will help your girlfriend, but I know I felt 10x more prepared to make the transition after reading it. Good luck to the both of you! And feel free to vent...I think most of us have had our rantings posted here a few times..its okay!
