What is Celiac Disease?
Celiac disease (aka coeliac disease) is a genetic autoimmune disorder where ingesting gluten (a protein in wheat, barley, and rye) triggers an immune response that damages the small intestine's lining. This damage leads to inflammation and atrophy of the villi, tiny finger-like projections in the intestine responsible for nutrient absorption. As a result, individuals with celiac disease may experience symptoms like diarrhea, bloating, fatigue, and malnutrition. Over time, untreated celiac disease can lead to more severe health problems, including anemia, osteoporosis, weight loss, and increased risk of certain cancers. A strict gluten-free diet is the only effective treatment. Celiac disease is an autoimmune disease, not a wheat allergy. It's also different from non-celiac gluten sensitivity, gluten intolerance, or sensitivity to gluten.

Gluten-Free Diet
To treat my celiac disease I had to go on a gluten-free diet for life. That meant learning to read food labels to avoid gluten ingredients, and eating a diet of mostly naturally gluten-free foods like meats, fruits, nuts, vegetables, and packaged foods only if they are certified gluten-free or labeled gluten-free, for example gluten-free breads made using gluten-free grains.

Just got Celiac blood test results back and they seem crazy high!
Hi, I have been having a lot of back pain and gut issues for 8 weeks or so. I saw the GI on Monday and my results just came in from the lab. Some of these number are high and off the little chart from the lab. I am reading this correctly that I most likely have Celiac, right??? So, I would assume it means that if the risk of developing celiac disease in the general population is 1%, people with the DQ2 gene have a 10% risk of developing celiac disease. So, have you or your physician concluded that you have celiac disease? -

Thanks for the update @TerryinCO! Would you elaborate what you mean when you say your genetic tests show that you are "10x higher" for developing celiac disease? 10x higher than what? There are two main genes, HLA-DQ2 and HLA-DQ8, that have been identified as providing the potential for developing celiac disease. Since 40% of the population carries one... -

Shortness Of Breath (the "sighs")?
I would stop Xanax. It will eat away at your DAO enzymes needed to break down histamine . No energy drinks will do the same. I use to have all reactions in stomach now it's changed and started in my chest , which completely sucks and bummed. Maybe your reacting to high histamine foods. But it's hard to avoid cross contamination. I would get pea milk made...
